Lemon Almond Poppyseed Loaf Recipe

Hello foodie friends! Doesn't it feel like no matter where you turn lately someone is posting something about lemons? Lemons in their drinks, lemons in their food, lemons in their cleaning products. Just me? Well I was inspired by all this lemon-mania to make a home base favorite: lemon poppyseed loaf.

for the loaf
• 3 large eggs
• 1 1/2 cup flour
• 1 cup sugar
• 1 cup almonds, slivered
• 1/2 cup sour cream
• 1/2 cup unsalted butter, room temperature
• 3 tbsp poppy seeds
• lemon zest from two lemons
• 4 tbsp lemon juice
• 1/2 tsp baking powder
• 1 tsp vanilla extract
• pinch of salt

for the glaze
• 1/2 cup powdered sugar
• 3 tbsp lemon juice
• 2 tbsp butter

Start by pre-heating the oven to 350˚

In a medium mixing bowl add flour, baking powder, salt. Stir together and then add poppy seeds and almonds.

 In another mixing bowl add lemon zest and sugar. Mix together until the sugar looks like it's a light yellow. Then add in butter and mix for about 1 minute at a medium speed. Then add one egg to butter mix at a time. Mix for another 30 seconds. Add in vanilla extract and sour cream.

Now add in the flour mix in small amounts. Mix for another minute.

In a well-greased loaf pan add batter and then bake for about 45-50 minutes. Check with a toothpick to make sure that it's done in the center, then let cool for about 10 minutes in pan before taking out.

While the loaf is cooling, make lemon glaze by adding ingredients in a bowl. Use a pastry brush to coat the loaf.

Cut into slices and serve with coffee to your guests!
