Impeccable Potato Salad

Hello food friends! As you know, all week Holly and I have been serving you ideas to make the ideal Valentine's Day meal for you and your soulmate/lover/partner/best friend. Holly and I decided that the way to top this week off, and give you a meal worth talking about would be to combine our two spirit foods and have a "coming of bodies" moment...how romantic!

I opted for a traditional potato salad that I have watched my father make for years. The only thing I left out was the onions because onions are awful.




Ingredients
•5 large red potatoes (cooked in a pressure cooker-thanks Holly!)
•1 cup mayonnaise
•2 tbsp mustard
•2 tsp sugar
•5 sweet baby gherkins chopped into small pieces
• 3 strips of bacon, crumbled
•A touch of vinegar
•1 clove chopped garlic (onion substitute)



Directions
Chop up the cooked red potatoes into quarters and put in a bowl. Once the potatoes are completed mix in the rest of the ingredients.
Mix until all ingredients are evenly spread and then chill in refrigerate for an hour.




Well, since I (Holly) have to be contradictory.  I'm going to tell you all about a delicious, warm potato salad.



Ingredients
•5 large cooked, red poatoes chopped into quarters
•1 to 2 cups mayonnaise
•3 strips of cooked, crumbled bacon
•1 tbsp ranch seasoning
•Salt and pepper to taste

Directions
Combine all ingredients in a large bowl and then enjoy warm for the purest flavor. It's also good cold, but you'll need to add more mayo right before you eat it because the potatoes absorb the mayo while resting.
