Roasted Carrots

Merry Christmas!  I love veggies.  I especially like roasted veggies!  They are so easy and taste amazing.  Warm or cold.  You can change up the herbs and spices and have a whole new dish.  Carrots are a fascinating vegetable.  They are sweet but can also be savory and they too taste great roasted!  Also since it is Christmas I thought I would make it a bit festive in the pictures.

5 carrots
Salt and pepper
Olive oil

Heat oven to 350°.  Peel and chop carrots.  I like to chop the thicker ends into smaller slices and the thinner ends I make longer.  I also peel my carrots because I find the peels to be on the bitter side.  Place carrot chunks on a backing sheet with olive oil, salt and pepper.  Toss to coat.  Bake for 20 minutes.  Stir and bake for another 15.  When the are soft they are done!  I like them with a little caramelization, but that is up to you.

You can add more veggies or herbs to your liking.  The possibilities are endless!  Enjoy and Merry Christmas!
